Watermelon has to be one of favourite summer fruits and mixed with the feta it’s the perfect simple starter for summers entertaining.
Ingredients
for the soup
- 1kg seedless chopped watermelon flesh
- 1 large peeled and deseeded tomato
- 1 large peeled and roughly chopped cucumber
- 1/4 roughly chopped onion
- 1/2 deseeded roughly chopped red pepper
- 2 deseeded chopped red chilli
- 4tbsp extra virgin olive oil
- juice and greased zest of 2 limes
- salt and pepper
to serve
- 350g roughly chopped watermelon flesh
- 1 small peeled and roughly chopped cucumber
- 1 large yellow or green chopped tomato
- 1/4 red onion very thinly sliced
- 100g feta cheese
- handful of finely sliced mint leaves
