This recipe is so amazingly quick to prepare and even quicker if you choose to use bought pastry instead of making your own which of course is absolutely fine.
With just a couple of ingredients and a couple of minutes you’ve a perfect starter for a summer lunch.
Ingredients
for the pastry
- 250g of wholemeal flour
- 100g of cold butter
- 1 whole egg + 1 egg yolk
- pinch of salt
for the filling
- 2 finely sliced onions
- 3 large thinly sliced tomatoes
- 2 tbs of Dijon mustard
- 100g grated hard cheese of your choice
- salt and pepper
