This easy lunch or light supper meal is simple to prepare and is great served with a simple tomato and avocado salad tossed with a little olive oil and balsamic vinegar.

- 250ml tub of mascarpone
- 200g smoked salmon
- small bunch of chopped spring onions
- 150g brie sliced
- 1 tbsp olive oil
- a pinch of salt and pepper
