This has to be the best salsa verde I’ve ever had and I can’t claim credit for it. My Colombian friends grandmother gave me the recipe and I’m slightly addicted to it. Salad, chicken, cheese, tomatoes, I add it to everything I can. The measurements aren’t exact in fact there aren’t really any so I’ve just given some rough estimates but everything is finely chopped!
Ingredients
- 2 spring onions
- small bunch of coriander
- white vinegar (great if you can use from a bottle of gherkins)
- 1 tsp paprika
- 2 tomatoes
- 1 red pepper
- 2 cloves of garlic
- salt and pepper
- 1 chili pepper
- small bunch of flat leaf parsley
