Monkfish can be a bit pricey sometimes so feel free to switch this with a nice piece of halibut or even cod. The smoked bacon works perfectly with both the fish and the sprouts and cooking them this way I can promise NO soggy sprouts.

- 700g Brussels sprouts
- dried herbs (thyme, bay)
