Wholesome and healthy these tuna stuffed courgettes are great by themselves or turn them into a whole meal with some slow roasted garlic potatoes cooked in the SBJ clay pot.
Ingredients
- 4 courgettes
- 1 large tin of tuna in water not oil if possible
- 100g pitted olives
- 2 slices of white bread
- 1 egg
- 1 crushed clove of garlic
- small bunch of basil
- 1 tsp of chilli
- small handful of pine nuts
- olive oil
- salt and pepper
