I love this chilled soup followed by a roasted tomato salad with perhaps a burrata / mozzarella or an avocado for a light lunch.
Ingredients
- 600g of plain yoghurt
- 250g crème fraîche
- 1 peeled, cooked cold potato
- 3 diced and deseeded cucumbers
- 1 small onion peeled and diced
- 1 deseeded and diced green chilli
- Salt and pepper
- a splash of lemon juice
- a couple of chives
