This veal dish is so tender and with the olives it really gives it that Mediterranean touch, if you really are against using veal then it could be substituted with turkey thighs.
Ingredients
- 4 x 200g slices of veal shank (1 per person)
- 3 crushed garlic cloves
- 2 finely chopped onions
- 2 sliced and diced carrots
- 400g tinned chopped tomatoes
- 200g of stoned green and black olives
- 1 dessert spoon of dried thyme
- 250ml of white wine
- drizzle of olive oil
- salt and pepper
