This spicy roast chicken with dried figs recipe can be as spicy or mild as you like, just add more or less chillies. Either way it’s simple to make and can be cooked entirely in the SBJ clay pot.
Ingredients
- enough chicken pieces (legs, breasts or drumsticks) for 4
- 1 whole fennel thinly sliced longways
- 2 onions thinly sliced
- 2 crushed garlic cloves
- 1,2,3 or 4 dried red chillies (I’ll let you decide)
- 1/2 a cinnamon stick broken into small pieces
- 1/2 tsp of freshly ground nutmeg
- 1/2 tsp ground cardamon
- 3 carrots peeled and roughly chopped
- 10 dried figs cut in half
- grated zest of 1 lemon
- 200ml hot chicken stock
- 1 small bunch of flat leaf parsley
