This super healthy bake is so simple to make and if you prefer you can easily switch the cod for another fish like salmon for example.
Ingredients
- 4 cod fillets
- 2 tins of chopped tomatoes
- 1 tbsp tomato purée
- 100g green and black olives (optional)
- 100ml red wine (can use a vegetable stock if you don’t want to use wine)
- bunch of oregano
- olive oil
- 1 thinly sliced red onion
- 500g new potatoes
